Fish
Grill the fish, with seasoning and lemon butter
Tomato dressing
Ingredients:
1kg Baby Tomato, sliced
2 Onions Onion chopped
30g Chopped basil
100ml Lemon juice
30ml Olive oil
3 cloves Crushed Garlic
Seasoning
Method:
Mix all the ingredients together.
Gremolata
Ingredients:
10 cloves Garlic, grated
5 Lemons, zested
100g Chopped Parsley
Baby marrow
Ingredients:
1kg Sliced baby marrow 5mm thick
80ml Olive oil
Seasoning
Method:
Toss the marrows with oil and salt and grill until well browned on both sides.Set aside to heat with the fish
Tapenade
Ingredients:
2kg Pitted olives
500g Sundried tomatoes
3cloves Chopped Garlic
10 Anchovy fillets
4tbs Capers
250ml Olive oil

Method:
Pulse all the ingredients together in the food processor.

To Serve
Dress the plate in tomato dressing; place the fish on top, sprinkle with gremolata, serve a spoon of tapenade and 4 grilled Baby marrows on the plate
