Grill the fish, with seasoning and lemon butter

 

Tomato dressing

Ingredients:

1kg      Baby Tomato, sliced

2           Onions Onion chopped

30g       Chopped basil

100ml  Lemon juice

30ml     Olive oil

3clvs    Crushed Garlic

 

Seasoning

 

Method:

Mix all the ingredients together.

 

Gremolata

Ingredients:

10clvs  Garlic, grated

5          Lemons, zested

100g    Chopped Parsley

 

Baby marrow

Ingredients:

1kg      Sliced baby marrow 5mm thick

80ml     Olive oil

 

Seasoning.

 

Method:

Toss the marrows with oil and salt and grill until well browned on both sides.

Set aside to heat with the fish

 

Tapenade

Ingredients:

2kg          Piped olives

500g        Sundried tomatoes

3clvs        Chopped Garlic

10 fillets Anchovy

4tbs         Capers

250ml     Olive oil

 

Method:

Pulse all the ingredients together in the food processor.

 

To Serve

Dress the plate with tomato dressing place the fish on top, sprinkle with gremolata, serve a spoon of tapenade and 4 grilled Baby marrows on the plate
