Muffuletta Sandwich
For the olive salad
What you need:
1 large roasted red pepper
1/2 cup green olives, pitted
1/2 cup black olives, pitted
¼ cup capers
1/2 peppadews
1 stalk celery roughly chopped
2 teaspoons dried oregano
5 garlic cloves peeled
1 tsp crushed red pepper flakes
1/4 cup red wine vinegar
1/2 cup olive oil
Salt and pepper to taste
What to do:
Place all ingredients and pulse until well chopped. Taste for seasoning and adjust accordingly.
For the sandwich
What you need:
Round crusty bread/ciabatta
Emmental cheese sliced
Fontina cheese sliced
Mozzarella Sliced
Salami sliced
Mortadella sliced
Prosciutto sliced
What to do:
Cut the bread in half sideways.
Then scoop out some of the bread flesh. Brush the insides of the bread with some olive oil and then a good amount of the olive salad, now add a layer of the salami, then mortadella, then the cheeses, and repeat. Now place the top part of the bread and wrap gently in cling wrap. Place a heavy weight on top and allow it to chill in the fridge until you are ready to eat.
Cut it into fours.
